Also covered will be the Ingredients, Terminology, Formulation, Manufacturing Processes, Flavors, and Defects associated with ice cream production. Following the lecture presentation; the participants will be given an opportunity to produce an ice cream following 3 different recipes. These recipes will result in the production of 3 different ice creams; all with potentially different flavor, texture and quality characteristics. These ice creams will then be tasted and evaluated by the participants, as well as discuss their conclusions related to the “experiment”.

As a related closing activity, the participants will be asked to complete an evaluation form to be used by the instructor to refine the presentation the future groups. Constructive criticism by the participants will be encouraged.
